What do you do when you sleep in (pretty significantly 😅) and it’s super dark, cold, & gloomy out? 🌫🧐 Stay cozy indoors and make a HUGE Saturday brunch feast, of course! 🥞🌱🤗 I’ve definitely been craving pancakes lately and have been meaning to give @vickycakespancakemix a try, so today was perfect to break out their vegan-friendly mix! 👌🏻 I tried the Blueberry Buttermilk mix and veganized it by subbing out the egg for @ayoyogurt’s blueberry almondmilk yogurt and the buttermilk for a mixture of @malkorganics’ cashew milk + 🍋 juice to make a vegan version! 🙌🏻 Huge thanks to @kindred.vegan.souls for helping with the tips on how to make this easy vegan swaps! 🥰 They came out SO light and fluffy (though I did burn them just a bit 😅) but you couldn’t even tell as the blueberry flavor came through wonderfully! 👏🏻 To complete my brunch feast, I had @allvegetarianinc’ vegan bacon on the side that I got from @plantsleadourway and a side of tofu scramble with spinach that you KNOW I made extra spicy with @yellowbirdsauce Serrano hot sauce on top. 🌶😋 I also loved being able to use @nunaturals low glycemic maple syrup to top my pancakes off and wash it all down with a cup of my chemex coffee with @eatdirtfood’ superfood spice mixed in. ☕️😍 Man, I showed have stay-in days like this more often! 😏 Hope everyone else is staying cozy and well-fed this holiday weekend! 😘

HA!..."⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We don’t have all of the junk in our mixes that other brands do, no artificial flavors, colors, preservatives, additives etc. We also use REAL premium ingredients to make our mixes. Happy Sunday! I love making breakfast on the weekends. One of my favorite breakfast foods has always been pancakes. 🥞My dad used to make them every Sunday morning. 😊 When @vickycakespancakemix asked me to try out their pancake mix, I was looking forward to a weekend pancake breakfast. The pancakes came out so yummy!! They were light and fluffy just as promised! I would definitely use the pancake mix again. I love that Vicky Cakes is a local company in the DFW area too! Use the code KVEGAN20 for 20% off! ⠀ The pancake mix itself is vegan, but if you want to follow the package instructions for pancakes, you have to adjust some of the ingredients. Instead of eggs, I used 1/4 cup of unsweetened @so_delicious vanilla yogurt. You can also use 1/4 cup applesauce or 3 tablespoons of aquafaba. Instead of whole milk, I used soy milk. I also swapped the buttermilk by making vegan buttermilk. I made a small portion with 1 cup of soy milk and 2 tablespoons of apple cider vinegar (or lemon juice) and let sit for 5-10 mins. 👍🏽 ⠀ Here's the full recipe to follow: ⠀ -1 package Vicky Cakes mix -1 vegan egg substitute (see above)⠀ -3/4 non-dairy milk (I used soy milk)⠀ -1/4 cup vegan buttermilk (see above) ⠀ -4 tsps vanilla flavor⠀ -3 tsps water⠀ -1 tbsp oil ⠀ 1. Heat 1 tbsp oil in skillet or griddle on medium heat.⠀ 2. Add dry pancake mix to a large bowl, and add one wet ingredient at a time, and stir.⠀ 3. Pour batter into hot skillet with spoon. 4. Cook for 2-3 minutes until bubbling on top and flip. Cook for 1 minute or until golden brown.⠀ ⠀ I recommend serving with fruit, jam, powdered sugar and/or whipped cream.

It’s almost fall y’all. And these apple “donut” pancakes had my house smelling like an autumn candle. . . I didn’t have any protein pancake mixes on hand , so I made my own. I used @vickycakespancakemix and added a few protein sources to pump them up 💪. . . No nutrition label was available on this product but that didn’t stop me. I just logged it like an all purpose baking mix (because you can do way more with this mix than just pancakes 🥞). That said, these came out delicious! . . I just love pancakes, in any form. . . . Tip: use one serving of the plant protein and one serving of the egg whites in place of the whole egg. I also used water in place of the buttermilk. . . I’ll definitely be making these again. The whole family approved. 🙌 . . *i added a few dashes of cinnamon and they were 👌**

Weekends are for pancakes!!! #ad 🥞 . . Just like Vicki and her family, it’s our own family tradition to make pancakes every weekend and today we surprised the kids with @vickycakespancakemix blueberry buttermilk pancakes!!
